This is one of Heather’s favorite snacks! It’s perfect for any meal and any event.

The Recipe:

1 can Cannellini Beans

1 can of Shoepeg Corn

1 can of Black Eyed Peas

Pimentos

Yellow Bell Pepper

Scallions

Sugar

Oil

White Vinegar

Combine  Cannellini Beans, Shoepeg Corn, Black Eyed Peas, Pimentos, Yellow Bell Pepper and Scallions into a large bowl. Combine Sugar, Oil, and White Vinegar into a medium saucepan. Bring it to a boil and immediately remove it from the heat. Combine the “sauce” with the beans mixture. Chill for two hours and serve.

[The recipe says the strain the excess liquids after chilling, but Heather thinks it is better if you don’t!]
